채용 포지션: Full-time
Essential role
- Oversee daily kitchen operations to ensure food quality, safety, timely service, and cost controls; be able to do any task required in the kitchen and act as the bridge between ownership/management and back‑of‑house staff. Most importantly, develop and implement a kitchen system that is sustainable and productive.
Core responsibilities
1. Cooking & Quality Control
- Cook with standardized recipes and plating/specs; perform quality checks on prep and final tickets.
- Monitor consistency, portion sizes, taste, and presentation on every shift.
2. Staffing & Scheduling
- Maintain crew schedules based on forecasted covers; recruit, interview, onboard, and train cooks.
- Manage shift assignments, call‑ins, overtime, and an on‑call list to maintain labor targets.
3. Training & Development
- Run onboarding for BOH staff, cross‑train stations, and maintain skill matrices.
- Coach staff on technique, speed, safety, and customer service; conduct performance reviews.
4. Inventory & Cost Control
- Lead inventory counts, maintain par levels, and manage ordering/reordering with approved vendors.
- Track food usage, waste, and theft; enforce portion control and yield management to hit COGS targets.
5. Food Safety & Compliance
- Ensure HACCP/ServSafe practices: proper storage, temperature logs, labeling, sanitation, and documentation.
- Maintain cleanliness standards, pass inspections, and implement corrective actions.
- Take care of a health inspection from the government and be sure to maintain it at above “90”.
6. Production Planning & Prep Management
- Create daily prep lists based on sales forecasts and expected covers.
- Sequence production to minimize waste and ensure timely ticket flow during peaks.
7. Purchasing & Vendor Relations
- Source and negotiate with suppliers for best prices and quality; approve invoices related to BOH purchases within limits.
- Test new products, manage deliveries, and resolve supply issues.
- Place an order online for kitchen items (food & supplies)
- Pick up groceries from markets such as Restaurant Depot, Sam’s club, and H mart on a weekly basis
8. Shift Management & Communication
- Lead line during service: expedite, resolve kitchen-side issues, manage ticket times, and communicate with FOH managers.
- Hold pre‑shift briefings and post‑shift debriefs; document significant issues.
9. Equipment & Maintenance
- Monitor kitchen equipment performance, schedule preventive maintenance, and report repairs; manage small repairs or reallocation of equipment.
10. Budgeting & Reporting
- Track BOH labor, overtime, food cost variances, and report weekly/monthly metrics to GM/owner.
- Recommend menu/item cost changes and specials informed by cost/usage data.
11. Safety & Team Culture
- Enforce a safe working environment and lead by example on professionalism and teamwork.
- Foster retention through recognition, clear expectations, and conflict resolution.
Experience & qualifications
- 3+ years BOH supervisory experience; culinary degree or equivalent preferred
- Strong knowledge of cost controls, inventory systems, and food safety certifications (ServSafe)
- Leadership, scheduling, and vendor negotiation skills
Daily/weekly checklist
- Daily: Pre‑shift meeting, temperature log, line check, prep assignment, post‑service debrief
- Weekly: Inventory count, ordering, schedule drafting, staff training session, KPI reporting
- Monthly: Menu costing review, supplier performance review, maintenance schedule check
지원 자격
-
English (Fluent)
- MS Office skill (Excel, Word, Powerpoint)
- 3+ years BOH supervisory experience
- Strong knowledge of cost controls, inventory systems, and food safety certifications (ServSafe)
- Leadership, scheduling, and vendor negotiation skills
